Mazatlán Hosts Mexican “Chef of the Year 2011-2012” Competition

Chefs from around Mexico gathered in Mazatlán on February 28th and 29th to compete in Mexico´s annual culinary competition “El Cocinero del Año” which last year was held in Los Cabos.

Twelve chefs from diverse States in the Republic, including for the first time three from Mazatlán, will vie for the coveted distinction using the kitchens at the University of Durango, Mazatlán campus.

Yesterday the competition began with the first six semi-finalists demonstrating their culinary artistry by preparing dishes from a previously undisclosed assortment of vegetables. Competing were Mazatlecan chefs Jonattan Valdez González, Juan Carlos Hernández Tirado and Pedro Ríos Millán, as well as chefs Lujan and Candelario León of Los Cabos, and Natalia from Mexicali.

Points are awarded for personal hygiene, cleaning and preparation of food and cleanliness of the counter spaces, as well as presentation and flavor of the dishes. The panel of judges is composed of recognized personalities in the Mexican culinary world including Drew Deckman, Fabiola de la Fuente and Sebastian Negrete.

Mazatlán chef Juan Carlos Hernández Tirado told media he has competed twice in the competition held in Los Cabos, and that this year he is a semi-finalist. His dishes would reflect Sinaloan cuisine typical to Mazatlán, El Rosario, Escuinapa and Villa Unión. Mazatlán chef Jonattan Valdez González added that dishes from southern Sinaloa, unlike those from the northern part of the State, are not known as well.

Owner of Los Cabos restaurant Deckmans San José and competition judge, Drew Deckman, pointed out there is a worldwide evolution in Mexican cuisine. Finally, he said, people are being educated to understand that Mexican cuisine is no longer enchiladas de pollo, that there is an understanding of indigenous organic ingredients and tradition thanks to a new generation of young chefs who have studied in France, Germany, Switzerland, China and the United States among other countries.
